Strawberry Margarita Ice Pops

It’s 90° in the shade.  The thermometer in the pool reads 89°.  In other words, summer — in all it’s steamy, suffocating, sticky glory — is here.  You have two choices — crank the A/C down to arctic-like temperatures and spend the season inside or wear virtually nothing and float around in the pool for the next 3 months  (really 4 months — because you know September is the hottest month of all in South Florida).  There’s also a third option:  A never-ending supply of Strawberry Margarita Ice Pops!

After those mango colada ice pops a few weeks ago, I warned you that the tide of popsicles was coming…  This time, I was inspired by the juicy red strawberries at the market (and by the tequila and triple sec left Scott left on the counter after making margaritas this weekend).

These popsicles are icy, fruity and not too sweet (though you can add more agave if you like a sweeter version).  I like them because they literally take 5 minutes to make.

Blend the fruit, lime zest and juice with the triple sec, agave and tequila and pour into the popsicle molds.  Freeze until solid and serve.

We actually served them a few different ways… plain – right from the freezer, dipped in margarita salt  with a shot of tequila on the side (tee hee hee), and dipped in a little sugar for a sweeter lick.   Don’t worry about getting tipsy — there’s only one shot of liquor for 6 popsicles, but it gives it a nice margarita flavor and that’s what I was going for!

An adults-only popsicle!

INGREDIENTS:

  • 1 ½ cups strawberries
  • ½ teaspoon lime zest
  • 2 teaspoons lime juice
  • 2 tablespoon tequila
  • 2 tablespoon agave
  • 1 tablespoon triple sec
  • Garnishes optional
  • extra tequila
  • margarita salt
  • sugar

DIRECTIONS:

  • Add all the ingredients into the blender and puree until smooth. Pour the puree into the ice pop molds, insert the “sticks and freeze until solid.
  • To serve: fill a glass with warm to hot water and dip the popsicle into the water — not quite to the rim. Count 5-10 seconds, remove from the water and slip off the cover. Serve as is or with optional garnish: Dip the popsicle in a little tequila and sprinkle with a bit of margarita salt, or for a sweeter ice pop, dip or sprinkle with sugar.

  2. I can never get my alcohol to freeze more than a slush. Maybe I’m not using enough fruit? I’m going to try these, though! That looks like it may just make you forget how hot it is here in Florida!

    1. Hey, don’t knock a good slushy! There’s not a lot of alcohol in these Pops – it’s really just a flavoring aspect.
