How To Make Linzer Hearts For Valentine's Day

Linzer Cookies are traditional two layer cookie filled with jam. This hazelnut version is one of my favorites.

Pulse hazelnuts and brown sugar together in a food processor to make a fine crumb, then  use it to mix up the cookie dough.

The dough will be thick and sturdy and it makes a lot because each cookie has a top and a bottom layer.

Divide the linzer dough and wrap in plastic, then refrigerate until firm.

Roll out the cookie dough to 1/4" thickness. Be gentle with it, though. You don't want to overwork it.

Cut out the dough using a round cookie cutter (preferably one with fluted edges for a pretty look.

Use a mini heart shaped cookie cutter to cut out small hearts in half of the hazelnut cookie rounds.

Bake the cookies on a silpat or parchment paper until lightly golden brown and set.  Let the cookies cool.

Spread red jam over the base of each Linzer Cookie (ones without the heart shaped cutout.

Sprinkle powdered sugar over the cookies with the heart shaped cutouts.
