Cinnamon Raisin Oatmeal Bread

I want to preface this post by saying I’m NOT A BAKER. Not even close.  This blog isn’t called “Crust and Crumb” or “Flaky but Sweet.” No.  We here at Garlic and Zest like to cook.  A little of this and that. Season to taste… you get the idea. But occasionally, I see a perfect… {insert harrowingly precise baked good here}… and tell myself, “You can DO IT!” which leads to this Cinnamon Raisin Oatmeal Bread.

The difference here is that I really COULD do it.  There was no cursing. No verbal self-loathing. No tears. It just worked. The premise of this recipe came from The All Purpose Baking Cookbook from King Arthur Flour.

I altered their original recipe for their Vermont Oatmeal Maple-Honey Bread to make this more of an all purpose raisin bread and it did what I’d hoped it would do.  Make a perfectly risen, chewy, subtly sweet loaf. I had to pinch myself.

It has emboldened me to want to tackle another bread recipe — maybe pumpernickel or rye?  Let’s wait ’til next year for that…

This bread is absolutely delicious when it’s hot from the oven, but if I’m honest, my favorite way to enjoy it is toasted with a pat of butter melting into the hot, crispy crumb.  

It’s also awesome with a smidge of jam as well and if you’re thinking homemade gifts for the holidays, gift a loaf of this bread along with a bread knife and cutting board for a very thoughtful present!

Cinnamon Raisin Oatmeal Bread

Makes 2 loaves of cinnamon scented bread.  Not too sweet, perfect for toast.

INGREDIENTS:

  • 2 ½ cups boiling water
  • 1 cup rolled oats
  • ½ cup brown sugar
  • 1 tablespoon maple syrup
  • 4 tablespoons unsalted butter
  • 1 tablespoon salt
  • 1 teaspoon cinnamon
  • 4 cups unbleached all purpose flour
  • 1 ½ cups whole wheat flour
  • 1 package instant yeast
  • 1 cup golden raisins

DIRECTIONS:

  • In the mixing bowl of a stand mixer, combine the oats, brown sugar, maple syrup, butter, salt and cinnamon.  Pour the boiling water over the mixture and stir to combine.  Set aside and let cool to lukewarm temperature between 100-105°F. (use an instant read thermometer to check)
  • In a medium bowl, combine the all purpose flour, wheat flour and yeast.  Stir to combine.  
  • Add the flours to the lukewarm liquid and stir with a wooden spoon to form a shaggy dough.  Add the golden raisins.
  • Place the bowl onto the mixing stand and use the dough hook attachment to knead the dough for about 5-7 minutes, until the dough is smooth.
  • Lightly grease a large bowl with a teaspoon of canola oil.  Transfer the dough to the bowl and flip it once or twice so there’s a light sheen of oil on the dough.  Cover with a clean dish towel and let rise for one hour or until doubled in size.
  • Divide the dough in half and shape into a loaf.  Place the dough into two greased 8 ½ x 4 ½” bread pans.  Cover the pans lightly with greased plastic wrap and rise for an hour, or until they’ve crowned.
  • Preheat the oven to 350°.  Bake the loaves for 35 to 40 minutes or until golden brown and the interior reaches 190° on an instant thermometer.
  • Let the loaves cool in their pan for 10 minutes before turning them out on a rack to cool completely.

About 16 slices per loaf/2 slices per serving.

    Now this is how I like to get my morning oatmeal! Great recipe and tastes like a step back into my childhood.

    This is a fabulous Oatmeal Raisin bread. The only thing I would add to the recipe is that while it is kneading you need to sprinkle flour in to keep it from sticking to the sides. I also used regular raisin instead of the golden ones and it came out fine. Will definitely be making this again. A nice soft bread excellent for toasting!
