Boozy Pineapple Upside Down Cake

This simple upside down cake starts with a standard yellow cake recipe spiked with golden rum.

We like Mount Gay, but any dark or golden rum will work well. Avoid white rum.

Add the dry ingredients to the wet ingredients.

Blend well until the batter is smooth and well combined.

Use fresh pineapple for this tasty pineapple rum cake.

Instead of rounds, cut the pineapple into thin slices from top to bottom and then cut them into planks.

Melt butter and brown sugar in a cake pan and add a shot of rum.

Arrange the pineapple planks & cherries in the  pan in any pattern you like.

Spoon the rum cake batter over the pineapple planks, spread evenly and bake.

When the cake is done baking, invert it out onto a cake plate & cool to serve.
