DIY Crispy & Light Lemon Meringue Easter Peeps

Use superfine sugar for the homemade peeps. (It's easy, just pulse granulated sugar in a mini food processor.

Beat the egg whites, superfine sugar & cream of tartar until whites are stiff and glossy.

Add a little yellow food coloring and lemon paste and beat to combine.

When the meringue is pale yellow and forms stiff peeks, it's ready to pipe.

Fill a piping bag fitted with a plain tip to pipe out the lemon meringue peep cookies onto a parchment lined sheet pan.

Pipe out the peeps with a long body and "c" shaped head. Don't worry if it's not perfect.

Bake in a low oven until the peeps are cooked through and crispy and light.

Melt chocolate and dip the flat end of a wooden skewer into the chocolate to make peep "eyes" by tapping onto the chicks.

These simple Easter cookies are light, crisp with a hint of lemon. They're fun to make with the kids too!

Make your own peeps for your Easter celebration.
