Healthy Shredded Cucumber Salad

This is a simple, healthy cucumber salad recipe that you can make in minutes.

Transfer the shredded cucumber to a fine mesh strainer set over a bowl to drain.

Discard the seeds in the middle of the cucumber.

After 20 or 30 minutes, look at all the liquid that the cucumber releases.

Pour the dressing over the drained grated cucumber.

Toss the salad well to coat with  tangy dijon dressing.

This healthy cucumber side dish is great w/spicy foods.
