How To Cook Lentils As A Side Dish

Here's a quick and easy lentil side dish that feeds a crowd & is ready in 30 minutes.

vegetable stock

brown lentils

bay leaf




Olive oil

Spread the brown lentils on a rimmed baking sheet and sort through to remove any pebbles or detritus.

Sweat the onions in olive oil until tender & translucent.

Add the lentils, vegetable stock, water & herbs.

Bring the pot to a boil, reduce heat to a simmer & cook for 25 minutes until the lentils are tender.

Season the lentils with garlic, ketchup, worcestershire sauce kosher salt & pepper.

Remove the thyme stems and bay leaf and discard.

These cooked brown lentils are flavorful & creamy to go w/lots of mains courses.
