How To Make Creamy Sausage Kale Potato Soup

This homestyle soup starts with Italian sausage links. It flavors the broth and adds a bit of kick! You can use hot or mild sausages.

Use a waxy potato like red or white potatoes or even Yukon Gold. Avoid russets as they'll absorb liquid and lose their form in the soup.

You can use either curly leaf kale or tuscan kale, just be sure to remove the tough stems.

Brown the sausage, then add the carrots, celery, parsnips and onion. Cook until the veggies are tender.

Add the diced potatoes to the pot.

Add dried oregano, crushed red pepper, fennel & bay leaf to season the soup.

Add the broth, bring to a boil and simmer for 15 minutes until the veggies are tender.

Add cream to the pot and warm through to serve.
