How To Make A Crisp-Tender Vegetable Medley

Loaded w/summer vegetables, this easy sautéed mixed vegetable recipe is quick & tasty!

Start with a zingy spice blend to give the mixed vegetables a lively kick.

Cut eggplant into 1" dice and separate broccoli into bite sized florets.

Sauté the veggies with a bit of the spice mixture until crisp tender & transfer to a large bowl.

While broccoli and eggplant sauté, cut the bell peppers into bite sized chunks.

Do the same with zucchini. Cut small end into rounds & the fatter end into half moons.

Do the same with the yellow squash.

Sauté the peppers, zucchini & squash w/a little of the spice mix. Cook until crisp-tender.
