How To Make Green Enchiladas

Making homemade green enchiladas is easy with this simple recipe. Use leftover chicken, beef or pork, corn tortilla, cheese & green enchilada sauce. 

We love to use leftover green chile pulled pork, but it's great w/leftover rotisserie chicken too. Use a canned green enchilada sauce or use my recipe.

Layer soft corn tortillas with a mixture of cheddar & monterey jack cheeses.

Top the cheese with the meat topping of your choice. I used leftover green chile pulled pork. Also try it with w/rotisserie chicken or ground beef.

Green enchilada sauce is made with tomatillos and charred poblano and jalapeno peppers for a flavorful Mexican topping.

Roll the corn tortilla snugly around the green enchiladas filling.

Place the enchiladas seam-side down on a layer of green sauce. 

Slather the tortillas with more green enchilada sauce & top w/cheese.

Bake for 15 minutes until the cheese is melty.

Serve the green enchiladas with your favorite garnishes, like avocado, cilantro green onions & sour cream.
