How To Make Easy Key Lime Cookies with Glaze

These simple slice and bake key lime cookies are easy to assemble. Start w/ the dry ingredients: flour, cornstarch, powdered sugar, salt & the secret ingredient: citric acid.

Combine softened butter with lime zest and juice in a large mixing bowl. 

If you can't find fresh key limes, you can use bottled key lime juice or squeeze  juice from regular limes.

Use a hand mixer to beat the butter and lime together, then add the dry ingredients a little at a time, beating after each addition. 

Divide the key lime cookie dough into two separate portions on parchment.

Fold the parchment over the dough and pull the parchment into the dough to form a log of cookie dough.

Roll the log of dough in colored sprinkles or jimmies and refrigerate for 2 hours or more to firm up the lime cookie dough.

Slice the chilled cookie dough into 1/4" thick slices and transfer to a prepared baking sheet. Bake for 9-11 minutes until just set.

Spread the simple powdered sugar glaze over the cooled baked cookies and sprinkle with extra garnishes. 

These key lime cookies are tart and sweet. They're lovely to look at and better to eat. Recipe makes about 50 lime cookies.
