How To Make Lemon Glazed Blackberry Muffins

Blackberries are one of my favorite berries and they're absolutely perfect in my simple lemon muffin recipe.

I like to make mini muffins, so cutting the blackberries in half is the perfect solution for diminutive muffins.

This easy blackberry muffin recipe uses everyday ingredients. Just mix up the dry ingredients in one bowl.

Put the wet ingredients (melted butter, egg, yogurt, vanilla & lemon zest) in another bowl.

Combine the wet & dry ingredients to make the lemon muffin batter. Be careful not to over mix.

Gently fold in the blackberries until they're well combined.

Portion out the blackberry muffin batter into mini muffin tins and bake for 13-15 min.

You want them to be light golden brown and springy to the touch.

Cool the muffins on a wire rack, then drizzle with lemon glaze to serve.
