Use fresh oysters in their shell for this amazing seafood appetizer.

Shuck the oysters using an oyster knife. Try to preserve the brine.

Saute spinach in butter, garlic & shallots. Deglaze w/pernod, pastis or vermouth.

Make Parmesan herb breadcrumbs in a mini food processor.

Place the shucked oysters on a bed of rock salt to hold them upright.

Add the spinach mixture to oysters on the half shell.

Top with fresh breadcrumbs and bake to golden brown.
