Incredible Strawberry Daiquiri Ice Cream

This homemade strawberry ice cream starts with fresh strawberries roasted w/sugar &a bit of lime juice to soften them.

After cooking the strawberries in the oven, they're soft and sweet with a lovely aromatic syrup.

Puree the roasted strawberries in a food processor until smooth. This mixture goes in the ice cream and makes the swirl.

Combine the milk, corn syrup, sugar and cream in a saucepan and simmer until the sugar dissolves.

Combine the milk with a cornstarch slurry and add strawberry puree and a shot of golden rum.

Mix the strawberry daiquiri ice cream base well, then refrigerate for several hours or overnight.

Pour the ice cream base into your ice cream maker and follow the manufacturers instructions . I use an inexpensive Cuisinart ice cream maker.

When the strawberry ice cream is done churning (about 20-25 minutes), it will have the consistency of soft serve.

Layer the strawberry ice cream with swirls of strawberry puree. Freeze in a storage container until the ice cream is firm.

This strawberry ice cream is the best. The added rum helps keep it scoop-able.
