Instant Pot BBQ Pulled Pork Tenderloin

We love pulled pork, but it can be so fatty. Using lean pork tenderloin instead of pork shoulder makes it healthier & so tasty.

Just cut the tenderloin into chunks (so it fits in the Instant Pot) and season with all purpose BBQ rub.

Turn on the sauté function of your instant pot and heat up the olive oil to sear the chunks of pork tenderloin.

You may have to work in batches to do this. You don't need to cook the pork all the way, just brown it.

Add chicken broth, your favorite BBQ sauce & a little apple cider vinegar to the IP  & cook on high pressure for 45 minutes.

Remove the cooked pork tenderloin and shred the pork finely with forks or BBQ shredders.

Add extra bbq sauce and a cornstarch slurry to the liquid left in the pressure cooker & simmer until saucy.

Add the sauce back to the pulled pork tenderloin and mix together until you have the right consistency.

This BBQ pulled pork tenderloin is so tender and flavorful. Plus, it's much healthier than most recipes.

This makes the best pulled pork sandwiches for an easy weeknight family dinner. It's great with coleslaw.
