Make Ahead Turkey Neck Gravy  (no drippings)

Use the turkey neck and giblets to make a flavorful velvety gravy for your holiday meal. It's easy.

To make the turkey gravy, start w/broth, the turkey neck & giblets, celery, onion, peppercorn & sage.

Simmer the broth for 20-30 minutes.

Remove the turkey neck, then strain the vegetables and solids out of the enriched stock. 

If you've ever had trouble with lumpy gravy, try using Wondra flour instead of all purpose.

Melt the butter in a saucepan and add the flour, stirring constantly until it's bubbly & smooth.

Add the enriched turkey stock to the butter and flour mixture, stirring until the gravy is smooth. 

It's easy to make this turkey gravy without drippings, but if you have them, use them! Season the sauce w/sherry wine & a touch of maple syrup.
