One of my favorite recipes to make with leftover corned beef from St. Patrick's Day is this classic Reuben sandwich. It's hot, cheesy griddled & delish!

It just takes a few ingredients and and 15 minutes. Start by draining the sauerkraut and blotting dry with paper towels.

Make your own Russian dressing with a few household staples like mayonnaise and ketchup.

Assemble the ingredients for the leftover corned beef sandwich. Use a good rye bread for best results.

To assemble the Reuben sandwich, liberally spread the rye bread w/dressing.

Pile on copious amounts of thinly sliced corned beef. You can also use deli meat if you don't have leftovers from St. Patrick's Day.

Add the drained sauerkraut on the opposite slice of bread. Make sure it's patted dry so the sandwich doesn't get soft and mushy.
