Savory Stuffed  Honey Nut Squash

Honey nut squash are smaller and sweeter than larger butternut squash.

And they're easy to work with. Just split them in half and remove the seeds.

Brush with oil and roast the squash on a baking sheet until they're tender.

While the squash roasts, make the filling with a whole grain blend, mushrooms & kale

Sauté the chopped mushrooms and onions until tender.

Fluff the grains for the honey nut squash filling.

Add wilted kale and parmesan cheese to the mushrooms and grains.

Fill the squash halves with the stuffing, top with breadcrumbs and bake until the tops are crispy.

Served on a platter, this stuffed squash is a great side dish for Thanksgiving.
