Tuscan Sausage Pasta & Kale Soup

There's nothing as comforting as homemade soup and this recipe makes a quick, easy one pot meal with everyday fresh and canned veggies, spicy Italian sausage & shell pasta.

This simple soup recipe starts with spicy Italian sausage, crumbled and browned in a large pot or dutch oven.

Add chopped carrots, onions, celery and garlic to the browned sausage and cook until softened.

Then come the pantry ingredients: canned white beans and tomatoes, dried herbs and chicken stock.

We love this "dump and go" kind of recipe. It's so simple and the flavors are on point.

If you have homemade chicken stock, use it. Otherwise, use low-sodium.

We like to use medium shell pasta for this soup, but you can also try ditalini, farfalle or orecchiette,

fresh chopped kale is sturdy enough to maintain a little chew in the hot soup, but you can also use spinach.

This makes a big pot of the best homemade soup. Great for weeknight dinners & yummy with crusty bread.

Don't forget a sprinkle of parmesan cheese for garnish. It's the best.
