This simple soup recipe starts with spicy Italian sausage, crumbled and browned in a large pot or dutch oven.

Add chopped carrots, onions, celery and garlic to the browned sausage and cook until softened.

Then come the pantry ingredients: canned white beans and tomatoes, dried herbs and chicken stock.

We love this "dump and go" soup recipe. It's so simple and the flavors are on point.

If you have homemade chicken stock, use it. Otherwise, use low-sodium canned broth.

We use medium shell pasta for this Italian sausage soup recipe, but also try ditalini, farfalle, orecchiette or other small, dry pasta.

Fresh chopped kale is sturdy enough to maintain a little chew in the hot Italian sausage soup, but you can also try spinach or escarole.

This makes a big pot of the best homemade sausage and kale soup. Great for weeknight dinners.

Don't forget a sprinkle of parmesan cheese for garnish. It's the best.
