What to make w/leftover Colcannon (or plain mashed potatoes)

Whenever you have leftover mashed potatoes or leftover Colcannon, make this easy recipe so nothing goes to waste.

Mix the egg, flour, cheddar, salt and pepper with leftover mashed potatoes or colcannon and stir until it's well combined.

Form the mashed potato dough into individual patties and refrigerate until firm. (They're easier to fry that way.)

Coat the patties in panko breadcrumbs completely. Panko are the crispy Japanese breadcrumbs and give a crunchy coating.

Fry the patties on both sides in a skillet, deep fryer or even an air fryer, flipping halfway through.
