Ingredients
FOR THE WATERMELON CUCUMBER SALAD:

cups
seedless watermelon
cut into 1" cubes
3-4

persian cucumbers
cut into ½" rounds or 1 hothouse cucumber, diced.

block feta cheese
cut into ¾" dice

teaspoons
fresh mint leaves
chopped
FOR THE HONEY LIME DRESSING:
½
teaspoon
lime zest

tablespoons
lime juice
1
tablespoon
honey
½
teaspoon
kosher salt

teaspoon
freshly ground black pepper
Instructions
MAKE THE HONEY LIME DRESSING:
In a small prep bowl combine the honey, lime zest and lime juice -- mix until well combined. Drizzle over the salad and toss to coat.
ASSEMBLE THE WATERMELON SALAD:
Combine the watermelon, cucumber, and feta in a large bowl.
Add the dressing and gently toss to coat. Sprinkle the salad with fresh mint leaves and serve.
Notes
This salad is best enjoyed when you make it. Leftovers will keep for one day, well wrapped in the refrigerator.
