1 teaspoondried oregano
1 teaspoonkosher salt
1/2teaspoon black peppercorns
1/2 teaspoon cayenne pepper
1/4cup fresh lime juice
2 tablespoons olive oil
1 1/2 pounds chicken drumsticks
MAKE THE MARINADE:
In a clean coffee grinder or spice mill, combine the cumin, oregano, parsley, turmeric, coriander seeds, salt, peppercorns and cayenne pepper. Process until finely ground
In a small bowl, combine the ground spices with lime juice and oil. Place the chicken in a resealable bag. Add the marinade, seal and massage until the chicken is well coated. Marinate at room temperature for 30 minutes or in the refrigerator for up to 24 hours.
When you are ready to cook, place the drumsticks, skin side up in the air fryer basket. Set the airfryer to 400° for 20-25 minutes, turning the legs halfway through the cooking time. Use a meat thermometer to ensure that the chicken has reached an internal temperature of 165°.
