1/2yellow bell pepper1/4" dice
1jalapeñoseeded and minced
1bunch scallionsthinly sliced on a bias
2 15-ounce cansblack beansrinsed and drained
1 10ounce canoriginal "rotel" tomatoes with green chilidrained
1/2smallred onionfinely diced
1limezested and juiced
In a large bowl combine the bell peppers, jalapeño, garlic, beans, scallions, rotel tomatoes, lime zest and juice, red onion, cilantro, salt and pepper. Toss to combine.
