For The Dressing:
1 tablespoon whole grain dijon mustard
1 1/2tablespoons cider vinegar
2tablespoonshoneypreferably a citrus honey
3tablespoons olive oil
1/2teaspoon kosher salt
1/4teaspoon black pepper
For The Salad
114-oz canwhole hearts of palmdrained, sliced crosswise into 1/4" rounds
1/2english cucumberthinly sliced into half moons
2radishescut into matchsticks
1/4 medium red onionvery thinly sliced
Make The Dressing:
In a small bowl, combine all the ingredients for the dressing and whisk to combine. Set aside.
Make The Salad:
In a wide, shallow bowl combine the hearts of palm, orange supremes, cucumber, radishes and red onion. Add about 3 tablespoons of dressing and toss to combine. If the salad needs more dressing, add it one tablespoon at a time, but don't overdress. Sprinkle micro greens over the salad and serve.
