Ingredients
For The Dressing:

teaspoon
orange zest

clove
garlic
minced

tablespoon
whole grain dijon mustard

cider vinegar

honey
preferably a citrus honey

olive oil

teaspoon
kosher salt

teaspoon
black pepper
For The Salad
1
14-oz can
whole hearts of palm
drained, sliced crosswise into 1/4" rounds
2
large
oranges
supremed
½
english cucumber
thinly sliced into half moons
2
radishes
cut into matchsticks
¼
medium
red onion
very thinly sliced
¼
cup
microgreens
(optional)
Instructions
Make The Dressing:
In a small bowl, combine all the ingredients for the dressing and whisk to combine. Set aside.
Make The Salad:
In a wide, shallow bowl combine the hearts of palm, orange supremes, cucumber, radishes and red onion.
Add about 3 tablespoons of dressing and toss to combine.
If the salad needs more dressing, add it one tablespoon at a time, but don't overdress.
Sprinkle micro greens over the salad and serve.
Notes
Best eaten the same day you make it.
