Leftover Turkey Tortellini Soup

To make this easy turkey soup, start by sautéing mushrooms in a heavy dutch oven. until browned. 

Then add chopped carrots, onions and celery and cook for a few minutes until they're tender and the celery and onion are slightly translucent. 

Add the turkey or chicken stock. I recommend using low sodium broth. Another trick is to use a leftover rind of parmesan cheese to give the soup richness.

After simmering the turkey soup,remove the softened cheese rind before adding the rest of the ingredients. 

Chop your leftover turkey into bite sized chunks. You can use dark or white meat turkey (or both).

Add the leftover turkey to the soup and simmer.

You can use frozen or fresh cheese filled tortellini for the turkey soup recipe. Mine were the fresh pasta & came from Trader Joe's.
