Loaded Bacon & Egg Potato Salad

An old fashioned potato salad recipe starts with real potatoes. We like Yukon Golds for their texture.

Start by cutting potatoes into bite sized pieces and boil them until their just tender for 10-12 minutes.

See if they're done by piercing them with a paring knife. If they slide off the knife easily, they're done.

Add red wine vinegar to the drained hot potatoes.

Cook the bacon until crispy. Pro-tip: Baking it is easiest.

Finely chop the celery, onions and scallions.

Pro-Tip: Let the onions soak in ice water to soften the harshness and sting. Drain well and pat dry before adding to the salad.

Mix mayonnaise, dijon mustard, salt, pepper and smoked paprika for the potato salad dressing recipe.

Chop hard boiled eggs for the loaded potato salad.

Add the potato salad dressing, veggies, bacon and eggs to the cooled potatoes and gently mix to combine.
