A classic French vinaigrette — Dijon, red wine vinegar, and good olive oil, whisked into an emulsion in five minutes. No sweetener needed; this is the leaner, sharper dressing my mother made before it ever occurred to either of us to buy one.
In a small bowl combine 1 small clove garlic, ½ teaspoon sea salt, ¼ teaspoon black pepper, 1½ teaspoons Dijon mustard, 1 tablespoon red wine vinegar and mix well to combine.
Add 3 tablespoons extra-virgin olive oil, one tablespoon at a time and whisk after each until the mixture is smooth and emulsified. Continue whisking in the oil until it's thoroughly incorporated.
