Tipsy Fruit
Arguably, summer fruit is THE BEST! Give me an icy wedge of watermelon or some juicy berries on a sweltering July day and I’m a happy camper! Sometimes, I get carried away, though — and over-buy. In my defense — all of the fruit in the market just looks so inviting it’s hard to resist. It’s also hard to resist a ready-made fruit salad and I’ve found that if there’s one prepared, folks will bypass cookies and other sweets in favor of this Tipsy Fruit. Yes, tipsy.
Of course, you can use any mix of fruits you like, but I find an assortment of berries, melons and citrus hits all the right notes. In this case, I used watermelon, pineapple, grapes, strawberries and blueberries.
Fruit and liquor have a long-standing friendship. Think Bananas Foster or Cherries Jubilee, not to mention fruity cocktails like daquiris, coladas and sangrias.
Start with a simple syrup made of rum, triple sec and sugar. While it cools, prep the fruit, then toss it with the syrup.
For a little more of that tipsy flavor, add a tablespoon more of each of the liquors, just before serving.

Tipsy Fruit
INGREDIENTS:
- 3 tablespoons dark rum optional, plus one additional tablespoon before serving
- 3 tablespoons triple sec optional, plus one additional tablespoon before serving
- 2 tablespoons sugar
- 6 cups of your favorite fruit such as watermelon, pineapple, strawberries, blueberries, grapes, kiwi, cantaloupe, honeydew, oranges, cut into bite sized pieces
DIRECTIONS:
- Add sugar, and 3 tablespoons each of rum and triple sec to a small saucepan. Bring to a boil, stirring until sugar is dissolved. Cook for an additional minute or two until liquor reduces by about 1/3 and mixture becomes syrupy.
- In a large bowl, toss fruit with the syrup. Taste a piece of fruit. If you want a more pronounced liquor flavor, add up to an additional tablespoon of each liquor and toss again. Chill fruit before serving.

This is a super way to the summer! I just love the summer, because there is so much available that is locally grown. Fruit salads, tipsy or not, are my favorite refresher!
